I just posted a suggestion in another thread, but it seems to be appropriate for this one as well. PYRO Platforms are a decent option for pedals. While not an ideal for mountain biking, I have been using them to train in for a triathlon, and they have worked well on my road bike. For more review like info and some pics check out my post on them

Thanks so much for the suggestion of the Pyro Platform. I just LOVE my VFF & purchased them to help with my transition times in triathlons. A lot of the courses I run there is quite some distance from the swim to the bike & the course is full of mulch & rocks so I thought the VFF's would help save the bottoms of my feet from getting cut up and of course with my transition times.
Went out on my bike for the first time today & it definitely felt different with my VFF's vs. a regular running shoe.
